Ingredients:

1 lb ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning mix (or homemade seasoning)
1/2 cup water
1 cup shredded cheddar cheese (or a mix of your favorite cheeses)
1/2 cup sour cream
1/4 cup salsa (optional)
4 large flour tortillas
1 cup lettuce, shredded (optional)
1 tomato, diced (optional)
1/2 cup shredded Mexican cheese blend (optional)
Salt and pepper to taste
Olive oil for cooking

Instructions:

Cook the Ground Beef
:

In a large skillet, heat a small amount of olive oil over medium heat.
Add the ground beef and cook until browned, breaking it up with a spatula as it cooks.
Drain any excess fat, then add the chopped onion and garlic. Cook for another 3-4 minutes until the onion softens.

Season the Beef:

Stir in the taco seasoning mix and water. Let it simmer for 5-7 minutes until the mixture thickens and becomes flavorful. Season with salt and pepper to taste.

Assemble the Burritos:

Warm the tortillas by placing them in a dry skillet for about 30 seconds per side or in the microwave for 10-15 seconds.

Spread a layer of sour cream (and salsa, if desired) on each tortilla.
Spoon some of the seasoned ground beef mixture onto each tortilla, then sprinkle with shredded cheddar cheese (and optional Mexican cheese blend for extra cheesy goodness).

Roll the Burritos:

Fold in the sides of the tortilla and then roll it up tightly from the bottom to encase the filling.

Optional – Melt the Cheese:

If you want the burritos extra cheesy, place the burritos seam-side down in a hot skillet for 2-3 minutes, allowing the cheese to melt and the burrito to crisp up.

Serve:

Garnish with fresh lettuce, diced tomatoes, or more cheese if desired. Serve with extra salsa or sour cream on the side.

Enjoy your cheesy ground beef burrito!
