Ingredients:

  • 3 cups mashed potatoes (preferably cold)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 large eggs
  • 1/4 cup sour cream (optional)
  • 1/4 cup green onions or chives (chopped)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for coating)
  • 2 tablespoons butter (melted)

Instructions:

  1. Preheat oven: Set your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or butter.

  2. Prepare mashed potatoes: If you don't have leftover mashed potatoes, boil peeled potatoes until tender, then mash them with butter, milk, salt, and pepper. Let them cool slightly.

  3. Mix ingredients: In a large bowl, combine the mashed potatoes, cheese, eggs, sour cream, green onions (or chives), garlic powder, onion powder, salt, and pepper. Stir until everything is well incorporated.

  4. Form the puffs: Using a spoon or your hands, form the mashed potato mixture into small, golf ball-sized portions and place each one into the muffin tin. Press each portion down gently to flatten slightly.

  5. Coat with breadcrumbs: Dip each mashed potato puff into the breadcrumbs, rolling to coat completely, and return to the muffin tin.

  6. Add butter: Brush the tops of each puff with the melted butter.

  7. Bake: Place the muffin tin in the oven and bake for 20–25 minutes or until the puffs are golden brown and crispy on top.

  8. Serve: Let the cheesy mashed potato puffs cool for a couple of minutes before serving. Enjoy!
