Ingredients:
- 3 cups mashed potatoes (preferably cold)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 2 large eggs
- 1/4 cup sour cream (optional)
- 1/4 cup green onions or chives (chopped)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (for coating)
- 2 tablespoons butter (melted)
Instructions:

Preheat oven: Set your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or butter.

Prepare mashed potatoes: If you don't have leftover mashed potatoes, boil peeled potatoes until tender, then mash them with butter, milk, salt, and pepper. Let them cool slightly.

Mix ingredients: In a large bowl, combine the mashed potatoes, cheese, eggs, sour cream, green onions (or chives), garlic powder, onion powder, salt, and pepper. Stir until everything is well incorporated.

Form the puffs: Using a spoon or your hands, form the mashed potato mixture into small, golf ball-sized portions and place each one into the muffin tin. Press each portion down gently to flatten slightly.

Coat with breadcrumbs: Dip each mashed potato puff into the breadcrumbs, rolling to coat completely, and return to the muffin tin.

Add butter: Brush the tops of each puff with the melted butter.

Bake: Place the muffin tin in the oven and bake for 20–25 minutes or until the puffs are golden brown and crispy on top.

Serve: Let the cheesy mashed potato puffs cool for a couple of minutes before serving. Enjoy!
