  • 1 tablespoon mayonnaise
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 teaspoon lime juice
  • Salt to taste

For the fresh salsa:

  • 2 medium tomatoes, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, finely chopped (optional for extra heat)
  • Juice of 1 lime
  • Salt and pepper to taste

For the burrito:

  • 4 large flour tortillas
  • 1 cup cooked rice (optional)
  • 1 cup black beans, drained and rinsed (optional)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1/2 avocado, sliced

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, cumin, lime juice, salt, and pepper.
    • Coat the chicken breasts in the marinade and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  2. Grill the Chicken:

    • Preheat a grill or grill pan over medium-high heat.
    • Grill the chicken for about 6-8 minutes per side or until fully cooked (internal temperature should reach 165°F).
    • Let the chicken rest for 5 minutes before slicing it into thin strips.
  3. Prepare the Spicy Drizzle:

    • In a small bowl, mix together the sour cream, mayonnaise, sriracha, lime juice, and a pinch of salt.
    • Adjust the level of heat by adding more sriracha if desired.
  4. Make the Fresh Salsa:

    • In a bowl, combine the diced tomatoes, red onion, cilantro, jalapeño (if using), lime juice, salt, and pepper.
    • Stir well and set aside.
  5. Assemble the Burritos:

    • Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
    • Lay a tortilla flat on a clean surface.
    • Add a few spoonfuls of rice and black beans (if using) to the center.
    • Layer with sliced grilled chicken, shredded lettuce, cheese, and avocado slices.
    • Spoon some fresh salsa over the top.
  6. Add the Spicy Drizzle:

    • Drizzle the spicy sauce generously over the ingredients in the center of the burrito.
  7. Roll the Burrito:

    • Fold in the sides of the tortilla, then roll it up tightly from the bottom to enclose all the fillings.
  8. Serve:

    • Slice the burrito in half (optional) and serve immediately, or wrap it in foil for an on-the-go meal.
